Coco-Nubbins!

Today I made my famous coco-nubbins. Anyone who has had a nubbin is welcome to comment.

Here’s the recipe:

3 cups raw organic shredded coconut
1 cup virgin coconut oil
1/2 cup raw sweetener (preferably raw palm sugar)
1/2 cup raw cacao powder
1 1/2 T vanilla extract
1 t Celtic sea salt (optional)

Place the dry ingredients into a large mixing bowl and mix with a fork until evenly distributed.
Melt the coconut oil at under 115 degrees.
Add the wet ingredients to the bowl and mix by hand until the coconut is covered evenly.
Spoon the coconut into mini (24 muffin) muffin pan indentations.
Place muffin pan in the freezer for thirty minutes.
Remove muffin pan from the freezer and remove nubbins.
Store in freezer bag in freezer or fridge.
Makes approximately 24 nubbins.
