Nothing completes a meal better than a decadent chocolate dessert. Below is the recipe for one of my favorite raw desserts: CocoaMotion.
Cocoa Motion Recipe
Ingredients:
2c raw cashew pieces
1c filtered water
1t vanilla extract
1/4c cocoa powder
4 dates (or 1/4 c agave or sucanat)
1/4 c coconut butter/oil (optional)
1/2 c shredded raw coconut (optional)
Fresh mint leaves (optional)
Place all ingredients (except the mint) into the food processor and process until smooth (about four minutes).
Garnish with mint leaves. Chill before serving.
