I finished “harvesting” my second batch of rejuvelac today, yielding three gallons. I had looked for some rye, but couldn’t find any. I tried a different variety of wheat, and the result seems to be about the same. I have the leftover wheat sprouts in the freezer awaiting my next batch of flax crackers, which will likely be my contribution at the next Denver rawluck.
I am on day one of fermentation of my most recent double batch of kim chee, which produced seven quarts. I’m playing with the seasoning, and will share the final result once it is ready. I put the daikon and carrots through the slicer wheel on my food processor this time, rather than using the grater wheel, and I hand chopped the cabbage, rather than putting it through the slicer wheel, like I did last time. The first batch was too chunky for me, and the second batch was too mushy for me. We’ll see if the methods used in the current batch will allow for a happy medium.
