(Day 28 – 338 To Go) January 28, 2008
Today I had my usual green smoothie, which tasted much better without the mustard greens. I had a Lara Bar and some Brazil nuts. Later I snacked on some raw goat cheese and dinner consisted of romaine lettuce leaves slathered with guacamole and some tomato, pepper and onion salsa.
I have wanted to make some crackers for some time and now finally have a use for the almond flour left over after my first batch of almond milk. I soaked two cups of flax seeds overnight. Boy to those things get gooey. I then added the almond flour left over from soaking one cup of almonds and then making almond milk.
I spread the mixture over several dehydrator trays and we’ll see how it turns out. I sprinkled some salt on all of them, then added something different to flavor each round. I’m excited to see how it all turns out.
