The freshly prepared guacamole I find in the refrigerated section at Whole Foods is amazing. There are days (like today) when one of those with some home made flax crackers is a perfect meal. I don’t know how many avocados go into one pint of guacamole, but it sure beats the hit and miss nature of buying the avocados themselves.
Do you have a guacamole recipe to share? Mine is below:
4 ripe avocados
1 small red onion
4 cloves garlic
4 ripe red medium tomatoes
1 lemon
Cilantro to taste
Celtic sea salt to taste
Pepper to taste
Slice open and scoop out the avocado and place in a medium mixing bowl.
Mince and add to the bowl the onion, garlic and cilantro.
Dice and add to the bowl the tomatoes.
Juice the lemon and add the juice to the bowl.
Add salt and pepper to taste.
