Valentine’s Day! in years past I would have gone out to dinner with my valentine. This year going out to eat would not be fun for me. So far as I know, there are maybe a dozen raw restaurants in the whole country, and none of them is in Colorado. If anyone has a raw restaurant they’d like to plug, here’s your chance.
I have thought a lot about how to make truly raw fine chocolates. I haven’t figured out a way yet, but I will eventually. If you have an idea, let us know!

What kind of truly raw fine chocolates are you talking about? I have lots of recipes. I also love challenges! Make a request and I will make you a recipe. Remind me next time we chat to tell you about my ‘other’ site.
I’d start with avocado. It deepens and darkens the chocolate flavor. However, I don’t know how you’d make the chocolate solid at room temp.
I’m thinking of something that can be made into bars or truffles or some kind of very fine, very expensive extra tasty treat.
I’m wondering if there is raw cocoa butter out there that we could mix raw cocoa powder and sucanat to make raw chocolate.
Also, I use coconut butter and cocoa powder to make my coco nubbins. If it can be kept refrigerated, that could make a very tasty chocolate.
