Raw Indian Food?

Today I tried to eat out for a business meeting. We went to a local Indian restaurant. EVERYTHING in the place was cooked, with the exception of the lettuce on the salad bar. I was able to get a plate of raw cauliflower, tomato slices, carrots, and frozen green beans and peas. I was not satisfied with the meal, but I was very satisfied with the heroic efforts of the management and kitchen staff to provide me with what I asked for.

I checked the kim chee today. It’s bubbling a bit as the fermentation continues. I don’t know how to tell when it is time, as there were no such instructions given in the recipe, only a mystifying “3 to 7 days” to wait. I can already tell that I’ll want to shred the vegetables in the next batch, and probably increase the fire in the spice. No matter what happens, I’ll be a happy camper, freed from paying $9 for a half-pint of kim chee.
